As it’s name suggest, it is cheese aged for no less than a 1000 days. This cheese is very mature, the flavours of this cheese is intense and savoury.
Cutting open this cheese reveals a crumbly and dark interior, it also contains white protein crystals within, adding a different look and adds a nice crunch with every bite, it is also a pasteurised and made with animal rennet.
