Mont d’Or

This seasonal PDO cheese has several special features: For one thing, it is wrapped in spruce wood, which once made it easier to transport, and the cheese was packaged in a box made of the same wood. Soft cheese with washed rind and covered with a light fluff of mold. The cheese has an authentic aroma characteristic of Mont d’or with a hint of spruce. The taste is woody and creamy, with persistent fragrance. Its texture is slightly fluid and very creamy. It tastes good cold or plain or warm with potatoes.
