The rind of the cheese is naturally washed with a burnt orange or brownish colour. The texture is smooth and slightly sticky, with a delicate, fruity flavour. The aroma of the pate is earthy, with a sharp, burnt caramel finish. This cheese is produced by artisanal cheesemakers using very traditional techniques, and the flavour varies significantly depending on the season – this is why the cheese has a rustic appearance and a wide range of flavours year-round.
