A Semi-Hard cheese that is a hybrid between a Stilton and Cheshire. Its beautiful orange-brown rind is the result of 10-12 weeks of maturity giving it a smooth feel. The interior is a dark yellow with marvellous blue marbling. Mouthfeel is sharp, strong in flavour with a tangy aroma to top it off.
Pairing: Pinot Noir or Reisling.
