Saint Nectaire


A semi-soft washed rind cheese from the Auvergne region of France. The milk used for this cheese comes from Salers cows and the pastures they graze are rich in volcanic content. The mouthfeel is peculiar pungent aroma with the interior tasting like almonds, shitake mushrooms and grass. Texture has a lovely chewy and springy feel making this cheese extremely unique in its own right.

Pairing: Shiraz or Bordeaux.
