This cow’s milk cheese has a wonderful velvety texture and a savoury flavour, with hints of nuts and sweetness. It has a rather strong aroma, and becomes more aromatic with age. It’s name comes from the French word “racler” which means “to scrape”. This makes an excellent melting cheese and it is traditionally grilled, and the melted parts are scraped off. Raclette goes best with fruits like apples, pears, plums, apricots, figs, mango, and papaya.
