Parmigiano Reggiano is a hard, dry cheese, produced exclusively in the Emilia-Romagna Lombardy region in Italy. As it ages, this cows’ milk cheese develops “flavour crystals”, giving it a delicious umami taste. When grated, this cheese is an amazing topper for pastas, soups and salads, but it can also be eaten alone as a snack. Parmigiano Reggiano also goes well with fruits, like strawberries and figs.
