Moliterno al Tartufo
Pecorino Moliterno al Tartufo is a pasteurized sheep’s milk cheese with thick veins of truffle produced on the island of Sardinia off the coast of Italy. The truffle element is added post-production and after some maturing, somewhat uncommon for a flavour-added cheese, by infusing the pecorino with a black truffle paste. Before adding the truffle, this method allows the cheese to develop its own aromas and the texture to “break down.”
The wheels are massaged with vinegar and local olive oil during the ten-month maturing period. These flavours, along with the truffle, permeated the cheese, counteracting the strong earthy overtones of the sheep’s milk.
